CHERRIES

Sour cherry gravy for duck, goose, pork, celery steaks, mushroom balls or tempeh

  • 20 oz Jar sour cherries (preferably pitted), separated into liquid and fruit - you may need to visit an Eastern European market

  • 12 Juniper berries

  • (Optional) 2 pine sprigs

  • 3 cloves

  • 1 in cinnamon bark

  • ¼ cup mixed dried mushrooms (rehydrated)

  • ½ bouillon cube & 1 cup broth

  • ½ tsp Worcestershire sauce

  • ½ cup red wine

  • 2 sprigs rosemary

  • 3 sprigs thyme

  • 1 tsp honey or sugar

  • 6 peppercorns

  • 3 chopped parsley stems

  • 1 finely chopped onion

  • 2-4 cloves garlic

  • 1 tsp starch

  • ¼ cup cranberry sauce

  • 1 cube butter (unsalted)

  • 2 tsp olive oil

  • 2 tsp red wine vinegar

  • Salt & pepper
