Sour cherry gravy for duck, goose, pork, celery steaks, mushroom balls or tempeh

20 oz Jar sour cherries (preferably pitted), separated into liquid and fruit - you may need to visit an Eastern European market

12 Juniper berries

(Optional) 2 pine sprigs

3 cloves

1 in cinnamon bark

¼ cup mixed dried mushrooms (rehydrated)

½ bouillon cube & 1 cup broth

½ tsp Worcestershire sauce

½ cup red wine

2 sprigs rosemary

3 sprigs thyme

1 tsp honey or sugar

6 peppercorns

3 chopped parsley stems

1 finely chopped onion

2-4 cloves garlic

1 tsp starch

¼ cup cranberry sauce

1 cube butter (unsalted)

2 tsp olive oil

2 tsp red wine vinegar
