Blueberry Lemon-Lavender Pie with Oat Crust
Blueberry-Lavender Marmalade

2 lbs fresh blueberries

¼ cup dried lavender buds

Juice of 1 lemon

2 cups sugar

1 tsp vanilla extract

In a medium saucepan, combine ingredients. Bring to a boil, then quickly turn the heat to low and simmer, stirring occasionally for 45 min or until the mixture becomes thick and slightly gooey.

Remove from heat and place in an airtight container. Refrigerate until ready to use.
